Check out the recipe for this simple, yet nutrient-dense breakfast which you can make within 5 minutes the previous night. This overnight oats recipe contains some superfoods which make it delicious, indulgent and super healthy.

Firstly, oats are an excellent source of vitamins, minerals, fibre and antioxidants. Fibre helps to keep you full for longer periods of time and release energy over sustained periods – just what we all require before a long day of work.

Secondly, chia seeds are a great source of energy. They provide energy which is easily absorbed by the body. In addition, they pack antioxidants, fibre, protein, calcium, omega-3 fatty acids, and carbohydrates. These tiny, yet mighty seeds provide us with everything we need for the day.

Finally, greek yoghurt is loaded with calcium, potassium, zinc, vitamins B12 and B6. It’s also a great source of protein, containing twice the amount of protein as regular yoghurts. It gives a thicker and creamier texture to the overnight oats because the liquid whey in the yoghurt is strained out. In summary, it’s what you need to make your breakfast nutritiously indulgent!

Ingredients
  

  • 1/2 cup rolled oats (1 cup = 90g)
  • cup greek yoghurt plain/flavoured (1 cup = 285g)
  • ½ cup almond milk/oat milk (1 cup = 240ml)
  • 2 tbsp LVL chia seeds (2 tbsp = 25g)
  • 1 tbsps sweetener of choice maple syrup/ dates syrup/agave syrup

Toppings:

  • ½ cup berries of choice approximately 80 – 90g or as required (sliced)
  • cup chopped nuts of choice (1 cup = 150g)

Instructions
 

  • Add the oats into a mason jar.
  • Then add greek yogurt and pour plant-based milk over it.
  • Finally, add chia seeds and sweetener.
  • Close the mason jar with lid and mildly shake a few times until it has mixed well.
  • Refrigerate overnight for at least 8 hours.
  • Remove from the fridge and dig in with your favourite toppings!
